Waldorf Chickpea Salad

🥗 Waldorf Chickpea Salad

Ingredients

  1. 1 (15 oz) can chickpeas
  2. 1–2 celery stalks, diced
  3. 2–3 green onions, chopped
  4. 2 heaping tbsp vegan mayo
  5. 1 tbsp spicy or Dijon mustard
  6. 1/2 tsp dried dill
  7. 1/2–1 tsp poultry seasoning
  8. 1/2 cup chopped red grapes

Directions

  1. In a large bowl, mash about half the chickpeas using a potato masher.
  2. Add all remaining ingredients. Mix well to combine. Adjust to taste.
  3. Serve chilled with Triscuits, crackers, or on toasted whole grain bread!

A great dish for potlucks, appetizers, or a protein-packed vegan snack!
