🥗 Waldorf Chickpea Salad
Ingredients
- 1 (15 oz) can chickpeas
- 1–2 celery stalks, diced
- 2–3 green onions, chopped
- 2 heaping tbsp vegan mayo
- 1 tbsp spicy or Dijon mustard
- 1/2 tsp dried dill
- 1/2–1 tsp poultry seasoning
- 1/2 cup chopped red grapes
Directions
- In a large bowl, mash about half the chickpeas using a potato masher.
- Add all remaining ingredients. Mix well to combine. Adjust to taste.
- Serve chilled with Triscuits, crackers, or on toasted whole grain bread!
A great dish for potlucks, appetizers, or a protein-packed vegan snack!
