Vegan Taco Salad

🧾 Ingredients

  • 1 bag of lettuce (use butter lettuce or romaine)
  • 1 avocado, diced
  • 1-2 tomatoes, diced
  • 1 white onion, diced
  • 1/2 bell pepper, diced
  • 1 cup mushrooms, diced
  • 1 bag Fritos® Chips*
  • 1 15 oz can of pinto beans
  • 1 bag of Beyond Meat Crumbles or other vegan protein of choice
  • 1 packet of vegan taco seasoning
  • Creamy Cilantro Lime Dressing or Vegan Chipotle Mayo
  • 1 tbsp olive oil

👩‍🍳 Directions

  1. Sauté onions, bell peppers, and mushrooms with olive oil in a skillet until soft.
  2. Brown vegan meat with taco seasoning per package instructions.
  3. Chop lettuce, tomato, onion, and avocado.
  4. In a large bowl or mixing tray:
    • Add lettuce
    • Top with warm beans and vegan meat
    • Sprinkle on chopped tomato, onion, avocado, and sautéed veggies
  5. Crumble Frito® chips on top and drizzle with dressing or chipotle mayo.
  6. Toss gently and serve immediately!

💡 Notes

This salad is perfect as a main dish or a hearty side!
*If Fritos aren’t available, crushed tortilla chips work great.
Try adding jalapeños or black olives for extra flavor!
