Vegan Taco Salad

🧾 Ingredients
- 1 bag of lettuce (use butter lettuce or romaine)
- 1 avocado, diced
- 1-2 tomatoes, diced
- 1 white onion, diced
- 1/2 bell pepper, diced
- 1 cup mushrooms, diced
- 1 bag Fritos® Chips*
- 1 15 oz can of pinto beans
- 1 bag of Beyond Meat Crumbles or other vegan protein of choice
- 1 packet of vegan taco seasoning
- Creamy Cilantro Lime Dressing or Vegan Chipotle Mayo
- 1 tbsp olive oil
👩🍳 Directions
- Sauté onions, bell peppers, and mushrooms with olive oil in a skillet until soft.
- Brown vegan meat with taco seasoning per package instructions.
- Chop lettuce, tomato, onion, and avocado.
- In a large bowl or mixing tray:
- Add lettuce
- Top with warm beans and vegan meat
- Sprinkle on chopped tomato, onion, avocado, and sautéed veggies
- Crumble Frito® chips on top and drizzle with dressing or chipotle mayo.
- Toss gently and serve immediately!
💡 Notes
This salad is perfect as a main dish or a hearty side!
*If Fritos aren’t available, crushed tortilla chips work great.
Try adding jalapeños or black olives for extra flavor!
