Vegan Grilled Stuffed Burritos

🧾 Ingredients

  • 1 pack vegan pollo asado or other meat substitute
  • 1/2 mashed avocado or guacamole
  • 1 can refried beans (black or pinto)
  • 1 cup pico de gallo
  • 1 cup shredded lettuce
  • 2 tbsp vegan sour cream (e.g. Follow Your Heart)
  • 1/3 cup vegan nacho cheese (e.g. Wayfare) or shreds
  • Optional: 1/2 cup brown or white rice (add salsa to make it “Mexican style”)
  • Large burrito-size tortillas
  • Nonstick cooking spray
  • Optional: Creamy cilantro-lime dressing for topping

👩‍🍳 Directions

  1. Prepare vegan protein according to package instructions.
  2. Warm refried beans on the stovetop or in the microwave.
  3. Warm tortillas for flexibility.
  4. On each tortilla, layer:
    • Refried beans
    • Vegan pollo asado
    • Rice (optional)
    • Guacamole
    • Sour cream
    • Pico de gallo
    • Lettuce
    • Nacho cheese or cheese shreds
  5. Roll the burrito tightly (fold in sides and roll).
  6. Spray a frying pan with nonstick cooking spray. Place burrito seam-side down. Grill both sides until golden brown and sealed shut.
  7. Optional: Drizzle with creamy cilantro-lime dressing and enjoy!

💡 Notes

Inspired by Taco Bell’s Grilled Stuffed Burrito — but veganized!
For gluten-free, use GF tortillas.
Try with hot sauce, salsa verde, or jalapeños for a kick.
