Vegan Sausage Sandwich

🌭 Sausage, Onions and Peppers Sandwich

Ingredients

  1. 1–2 packs of Beyond Meat Italian Sausage
    (Found at Whole Foods or Amazon)
  2. 3 bell peppers (any color), chopped or sliced
  3. 3–4 white onions, chopped or sliced
  4. 2 tbsp olive oil
  5. Sandwich rolls of choice
  6. Follow Your Heart Mozzarella or Provolone cheese slices
  7. 1–2 tbsp Italian seasoning
  8. 1 tbsp fennel seeds

Directions

  1. Prep vegetables and place in a slow cooker or crockpot. Drizzle olive oil on top, add seasonings, and stir to mix evenly.
  2. Cook veggies on low for 3 hours.
  3. After 3 hours, sear sausage links in a skillet for 2–3 minutes on each side.
    Then transfer sausages to the slow cooker and continue cooking on low for another 3 hours.
  4. While that finishes, prepare sandwich rolls.
    • Toast in the oven, lightly buttered, with slices of cheese on top so they melt.
  5. Once ready, scoop sausage and peppers into the rolls. Serve hot and enjoy!
