🥪 Vegan Reuben Sandwich
Ingredients
- A few slices of your favorite vegan pastrami (e.g., The Herbivorous Butcher)
- 2 slices of sourdough bread
- Vegan mayo (Trader Joe’s or Follow Your Heart)
- Vegan Thousand Island Dressing
- Jarred sauerkraut
- Follow Your Heart Provolone Cheese Slices
- Vegan butter
Directions
- Butter one side of each bread slice.
- On the inside of the sandwich, spread vegan mayo on one slice and Thousand Island dressing on the other.
- Layer vegan pastrami slices (to your preferred thickness).
- Top with one or two slices of vegan provolone cheese.
- Add sauerkraut from the jar — as much or as little as you like.
- Close the sandwich, buttered sides facing out, and cook in a frying pan until golden brown on both sides.
- Serve hot and enjoy!
