Vegan Reuben Sandwich

🥪 Vegan Reuben Sandwich

Ingredients

  1. A few slices of your favorite vegan pastrami (e.g., The Herbivorous Butcher)
  2. 2 slices of sourdough bread
  3. Vegan mayo (Trader Joe’s or Follow Your Heart)
  4. Vegan Thousand Island Dressing
  5. Jarred sauerkraut
  6. Follow Your Heart Provolone Cheese Slices
  7. Vegan butter

Directions

  1. Butter one side of each bread slice.
  2. On the inside of the sandwich, spread vegan mayo on one slice and Thousand Island dressing on the other.
  3. Layer vegan pastrami slices (to your preferred thickness).
  4. Top with one or two slices of vegan provolone cheese.
  5. Add sauerkraut from the jar — as much or as little as you like.
  6. Close the sandwich, buttered sides facing out, and cook in a frying pan until golden brown on both sides.
  7. Serve hot and enjoy!
