Vegan Pumpkin Spice Muffins

🧾 Ingredients
- 2 cups all purpose flour
- 1/2 cup white sugar
- 1 cup light brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3.5 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1.5 cups canned pumpkin puree
- 1/4 cup refined coconut oil (liquid form)
- 1 tbsp apple cidar vinegar
- 1 flax egg (3 tbsp water + 1 tbsp flax meal)
- 1 cup chopped pecan nuts
👩🍳 Directions
- Preheat oven to 350 degrees F, and get your muffin tray ready by spraying with nonstick spray.
- Prepare your flax egg by mixing your flax meal and water listed above in a small bowl. Let sit for a few minutes until it becomes “gooey”.
- In a large mixing bowl, add flour (sifting is ideal), white sugar, brown sugar, baking soda, baking powder, salt and pumpkin pie spice. Mix well with a wire whisk.
- Add the pumpkin puree, vanilla extract, coconut oil, and apple cider vinegar into your large mixing bowl. Then, add in flax egg.
- Mix well with a wooden spoon. The mixture should be pretty thick. Add in pecans, and stir to combine well.
- Divide the muffin batter evenly amongst the sprayed muffin pan/tray. Sprinkle some chopped pecans on top of your muffins.
- Bake muffins in the oven for about 20-25 minutes but remove when you can insert a toothpick and it comes out clean.
- Allow muffins to cool a bit and then transfer to a wire cooling rack to fully cool down…..ENJOY!!!!!
