Vegan Pumpkin Spice Muffins

🧾 Ingredients

  • 2 cups all purpose flour
  • 1/2 cup white sugar
  • 1 cup light brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3.5 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1.5 cups canned pumpkin puree
  • 1/4 cup refined coconut oil (liquid form)
  • 1 tbsp apple cidar vinegar
  • 1 flax egg (3 tbsp water + 1 tbsp flax meal)
  • 1 cup chopped pecan nuts

👩‍🍳 Directions

  1. Preheat oven to 350 degrees F, and get your muffin tray ready by spraying with nonstick spray.
  2. Prepare your flax egg by mixing your flax meal and water listed above in a small bowl. Let sit for a few minutes until it becomes “gooey”.
  3. In a large mixing bowl, add flour (sifting is ideal), white sugar, brown sugar, baking soda, baking powder, salt and pumpkin pie spice. Mix well with a wire whisk.
  4. Add the pumpkin puree, vanilla extract, coconut oil, and apple cider vinegar into your large mixing bowl. Then, add in flax egg.
  5. Mix well with a wooden spoon. The mixture should be pretty thick. Add in pecans, and stir to combine well.
  6. Divide the muffin batter evenly amongst the sprayed muffin pan/tray. Sprinkle some chopped pecans on top of your muffins.
  7. Bake muffins in the oven for about 20-25 minutes but remove when you can insert a toothpick and it comes out clean.
  8. Allow muffins to cool a bit and then transfer to a wire cooling rack to fully cool down…..ENJOY!!!!!
