Vegan Pinto de Gallo
🫘 Pinto de Gallo
Ingredients
- 1 can of pinto beans, rinsed (or 2 cups homemade)
- 2 tomatoes, chopped
- 1 green bell pepper, diced
- 1/2–1 cup of corn (frozen or canned)
- 1/2 white onion, diced (add more if preferred)
- 1/2–1 cup chopped cilantro (to taste)
- Juice from 1 lime
- Salt and pepper to taste
Directions
- Combine all ingredients in a large serving bowl.
- Serve as a side dish, or enjoy with tortilla chips as an appetizer!
My spin on pico de gallo — packed with protein thanks to the pinto beans. Delicious on its own or with chips!
