Vegan Pinto de Gallo

Ingredients

  1. 1 can of pinto beans, rinsed (or 2 cups homemade)
  2. 2 tomatoes, chopped
  3. 1 green bell pepper, diced
  4. 1/2–1 cup of corn (frozen or canned)
  5. 1/2 white onion, diced (add more if preferred)
  6. 1/2–1 cup chopped cilantro (to taste)
  7. Juice from 1 lime
  8. Salt and pepper to taste

Directions

  1. Combine all ingredients in a large serving bowl.
  2. Serve as a side dish, or enjoy with tortilla chips as an appetizer!

My spin on pico de gallo — packed with protein thanks to the pinto beans. Delicious on its own or with chips!
