Vegan Green Bean Casserole

🧾 Ingredients

  • Vegan cream of mushroom soup (such as Imagine or Vivian’s Live Again)
  • 1/4 cup plant-based milk (cashew or almond)
  • 4 cups canned or cooked green beans
  • 1 and 1/2 cups crispy fried onions (French’s or similar)
  • 1/8 tsp pepper

👩‍🍳 Directions

  1. Prepare vegan cream of mushroom soup according to package directions if needed.
  2. Preheat oven to 350°F.
  3. In a large bowl, mix soup, milk, and pepper. Once combined, stir in all green beans and approximately 1 cup of your crispy fried onions.
  4. Pour mixture into a greased baking dish and bake for 30 minutes or until hot.
  5. Remove from oven, stir, and top with the remaining 1/2 cup of onions. Bake for 5 more minutes until onions are golden and crisp. Enjoy!
