Vegan Gnocchi

Vegan Gnocchi

🧾 Ingredients

  • 1 16oz package of gnocchi (vegan)
  • 1 15 oz can of diced tomatoes
  • 1 15 oz can of white beans, rinsed
  • Olive oil
  • 5-6 garlic cloves, minced
  • 1 yellow onion, sliced
  • 6 cups of fresh spinach
  • 1/4 tsp pepper
  • 1/2 cup shredded vegan mozzarella cheese (Violife, Follow Your Heart, or Whole Foods brand suggested)
  • 1/4 cup shredded vegan parmesan cheese (Violife or Follow Your Heart recommended)
  • 1/2 cup of water

👩‍🍳 Directions

  1. Heat a large nonstick skillet with about 1 tbps of olive oil. Add your gnocchi in, and saute until they are soft and start to brown a bit. When done, transfer into a bowl and set aside.
  2. In same skillet, heat another tbsp of olive oil. Add in your sliced onions, and saute for a couple minutes on medium heat. Add in garlic and water, and cover skillet with a lid for about 6 minutes, or until onions are soft.
  3. Add in your spinach, and saute until it is wilted. Add in your beans, tomato, and pepper. Stir well to combine everything, and bring to a simmer.
  4. Add gnocchi into skillet, and mix well. Sprinkle your vegan mozzarella and vegan parm on top and cover with a lid. Once cheese is melted- serve and enjoy!!

💡 Notes

This vegan skillet gnocchi is perfect for weeknights—one pan, under 30 minutes, and totally satisfying. Canned white beans and fresh spinach bring protein and greens to a cozy, flavorful dish. For extra richness, try finishing it with a drizzle of olive oil or a sprinkle of vegan parmesan. Use shelf-stable gnocchi to keep ingredients on hand anytime.
