Vegan Cinnamon Swirl Cake

🧾 Ingredients
- 2 cups flour
- 2 tbsp cornstarch
- 3 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup almond milk
- 1 tsp white vinegar
- 2/3 cup sugar (or 1 tbsp more if using unsweetened milk)
- 1/4 cup oil
- 1 tsp vanilla extract
- 2/3 cup brown sugar
- 1 and 1/4 tsp cinnamon
👩🍳 Directions
- Preheat oven to 350°F.
- Spray a loaf pan with cooking spray.
- In a small bowl, combine cinnamon, brown sugar, and 1/3 of the white sugar. Mix with a fork. Add a pinch of salt and stir well.
- In a large mixing bowl, mix almond milk and vinegar. Let sit for 2 minutes. Add oil, 1/3 cup sugar, vanilla extract, and whisk well.
- Stir in flour, baking powder, baking soda, and salt. Whisk until smooth.
- Pour half the batter into the pan. Sprinkle half the cinnamon mixture.
- Add the rest of the batter, then the rest of the cinnamon sugar on top.
- Spray top with cooking spray or mist with oil.
- Bake for 40–45 minutes or until a toothpick comes out clean.
- Cool completely before slicing!
💡 Notes
Perfect as a breakfast loaf, afternoon snack, or sweet dessert.
Try adding crushed pecans or a drizzle of glaze on top.
Store in the fridge for longer shelf life — toast slices lightly to revive texture.
