Vegan Cinnamon Swirl Cake

🧾 Ingredients

  • 2 cups flour
  • 2 tbsp cornstarch
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup almond milk
  • 1 tsp white vinegar
  • 2/3 cup sugar (or 1 tbsp more if using unsweetened milk)
  • 1/4 cup oil
  • 1 tsp vanilla extract
  • 2/3 cup brown sugar
  • 1 and 1/4 tsp cinnamon

👩‍🍳 Directions

  1. Preheat oven to 350°F.
  2. Spray a loaf pan with cooking spray.
  3. In a small bowl, combine cinnamon, brown sugar, and 1/3 of the white sugar. Mix with a fork. Add a pinch of salt and stir well.
  4. In a large mixing bowl, mix almond milk and vinegar. Let sit for 2 minutes. Add oil, 1/3 cup sugar, vanilla extract, and whisk well.
  5. Stir in flour, baking powder, baking soda, and salt. Whisk until smooth.
  6. Pour half the batter into the pan. Sprinkle half the cinnamon mixture.
  7. Add the rest of the batter, then the rest of the cinnamon sugar on top.
  8. Spray top with cooking spray or mist with oil.
  9. Bake for 40–45 minutes or until a toothpick comes out clean.
  10. Cool completely before slicing!

💡 Notes

Perfect as a breakfast loaf, afternoon snack, or sweet dessert.
Try adding crushed pecans or a drizzle of glaze on top. Store in the fridge for longer shelf life — toast slices lightly to revive texture.
