Vegan Chocolate Chip Cookies

🧾 Ingredients
- 1/2 cup coconut oil (use the solid white part only)
- 1 and 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/4 cup canned Thai coconut milk
- 1/4 cup unsweetened applesauce
- 1/2 tsp salt
- 2 and 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 and 1/2 to 1 and 3/4 cups semi-sweet vegan chocolate chips
👩🍳 Directions
- In a large mixing bowl, cream together the solid coconut oil, brown sugar, and vanilla extract until well combined.
- Line a baking sheet with parchment paper and preheat oven to 375°F.
- Stir in the coconut milk and applesauce to the creamed mixture. Whisk until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Slowly incorporate the dry ingredients into the wet mixture. Stir until fully combined.
- Fold in the chocolate chips until evenly distributed.
- Scoop dough balls (about 2 tbsp size) onto prepared sheet. Flatten slightly.
- Bake for 8–10 minutes or until the edges are golden brown and the centers are just set.
- Let cookies cool on the pan 5 minutes before transferring to a rack. Enjoy!
