Vegan Chocolate Chip Cookies

🧾 Ingredients

  • 1/2 cup coconut oil (use the solid white part only)
  • 1 and 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/4 cup canned Thai coconut milk
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp salt
  • 2 and 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 and 1/2 to 1 and 3/4 cups semi-sweet vegan chocolate chips

👩‍🍳 Directions

  1. In a large mixing bowl, cream together the solid coconut oil, brown sugar, and vanilla extract until well combined.
  2. Line a baking sheet with parchment paper and preheat oven to 375°F.
  3. Stir in the coconut milk and applesauce to the creamed mixture. Whisk until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Slowly incorporate the dry ingredients into the wet mixture. Stir until fully combined.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop dough balls (about 2 tbsp size) onto prepared sheet. Flatten slightly.
  8. Bake for 8–10 minutes or until the edges are golden brown and the centers are just set.
  9. Let cookies cool on the pan 5 minutes before transferring to a rack. Enjoy!
