Vegan Chili
🧾 Ingredients
- 1 15oz can of kidney beans
- 1 15oz can of black beans
- 1 15oz can of garbanzo beans
- 2 tbsp of olive oil
- 2 green bell peppers, diced
- 2 white onions, diced
- 1 tsp ground cumin
- 1 28oz can crushed tomato
- 1 8oz can tomato sauce
- 1 6oz can tomato paste
- 1-1/2 tsp salt
- 1/2 tsp pepper
- 2 tbps chili powder
- 1 cup of frozen corn
- 1 tbsp sugar

- In a slow cooker, add all of the above ingredients. Slow cook on low for 5-7 hours. Serve and enjoy!
💡 Notes
This chili gets better the longer it simmers—let it cook low and slow for optimal flavor. It’s even better the next day, making it perfect for meal prep or next-day leftovers. Top with avocado, vegan cheese, or green onions for extra flair.
