Artichoke Chickpea Salad

🧾 Ingredients

  • 1 15oz can of chickpeas
  • 1 15oz can of artichoke hearts, chopped
  • 2-3 clove of garlic, minced
  • Juice from 1 lime
  • 1 cup fresh cilantro, chopped

👩‍🍳 Directions

  1. In a large bowl, combine all of the above. Season to taste as needed. Enjoy!

This bright and tangy salad is perfect as a quick lunch or potluck dish. No cooking required—just toss and serve chilled or at room temperature. Great stuffed into pita bread or served over greens.
