Vegan Burrito Bowls

🧾 Ingredients

  • 2 cups cooked brown rice (adjust based on servings)
  • 1 can of pinto beans, drained and rinsed
  • 1 container of pico de gallo
  • 1-2 chopped tomatoes
  • Shredded lettuce
  • Guacamole or diced avocado
  • 1 cooked vegan sausage link (or your favorite vegan protein)
  • Vegan Nacho Cheese (I recommend Wayfare Nacho Cheese or my homemade recipe)
  • 1/2 cup chopped fresh cilantro

👩‍🍳 Directions

  1. Cook rice (if not already cooked).
  2. Cook vegan sausage or desired protein per package instructions.
  3. In a bowl, layer rice, beans, protein, tomatoes, pico, lettuce, guacamole, and cilantro.
  4. Drizzle with warm nacho cheese and serve!

💡 Notes

Perfect way to use up leftover rice or beans in the fridge.
Customize with jalapeños, hot sauce, corn, or crushed tortilla chips!
