Vegan Burrito Bowls

🧾 Ingredients
- 2 cups cooked brown rice (adjust based on servings)
- 1 can of pinto beans, drained and rinsed
- 1 container of pico de gallo
- 1-2 chopped tomatoes
- Shredded lettuce
- Guacamole or diced avocado
- 1 cooked vegan sausage link (or your favorite vegan protein)
- Vegan Nacho Cheese (I recommend Wayfare Nacho Cheese or my homemade recipe)
- 1/2 cup chopped fresh cilantro
👩🍳 Directions
- Cook rice (if not already cooked).
- Cook vegan sausage or desired protein per package instructions.
- In a bowl, layer rice, beans, protein, tomatoes, pico, lettuce, guacamole, and cilantro.
- Drizzle with warm nacho cheese and serve!
💡 Notes
Perfect way to use up leftover rice or beans in the fridge.
Customize with jalapeños, hot sauce, corn, or crushed tortilla chips!
